- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 2 cups all-purpose flour
- 1/2 cup finely chopped almonds
- 1/2 teaspoon salt
- 1/2 cup blueberry preserves
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
- Cream the softened butter and powdered sugar together until light and fluffy, about 3-5 minutes.
- Add both the vanilla and almond extracts, blending well until smooth.
- Gradually mix in the flour, chopped almonds, and salt until just combined.
- Take about a tablespoon of dough, flatten it in your palm, and place a spoonful of blueberry preserves in the center.
- Fold the dough over the filling and gently roll it into a ball.
- Arrange the cookie balls on the lined baking sheet, leaving space between each.
- Bake for 12-15 minutes or until edges are lightly golden.
- Let the cookies cool on the baking sheet for 5 minutes before rolling in powdered sugar.
- Transfer to a wire rack to cool completely.
Notes
These cookies freeze excellently; prepare and roll them into balls, then freeze before baking. Add a couple of minutes to the baking time when ready to enjoy.
