Description

Delightful cookies filled with blueberry preserves, featuring a tender, buttery crust and a snowy powdered sugar exterior, perfect for winter festivities.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1/2 cup finely chopped almonds
  • 1/2 teaspoon salt
  • 1/2 cup blueberry preserves
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
  2. Cream the softened butter and powdered sugar together until light and fluffy, about 3-5 minutes.
  3. Add both the vanilla and almond extracts, blending well until smooth.
  4. Gradually mix in the flour, chopped almonds, and salt until just combined.
  5. Take about a tablespoon of dough, flatten it in your palm, and place a spoonful of blueberry preserves in the center.
  6. Fold the dough over the filling and gently roll it into a ball.
  7. Arrange the cookie balls on the lined baking sheet, leaving space between each.
  8. Bake for 12-15 minutes or until edges are lightly golden.
  9. Let the cookies cool on the baking sheet for 5 minutes before rolling in powdered sugar.
  10. Transfer to a wire rack to cool completely.

Notes

These cookies freeze excellently; prepare and roll them into balls, then freeze before baking. Add a couple of minutes to the baking time when ready to enjoy.
