Description

Delightful cookies with a buttery almond flavor and a surprise of juicy blueberries, dusted with powdered sugar.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar, plus more for dusting
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup almond flour
  • 1/4 teaspoon salt
  • 1 cup blueberries, fresh or jam

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the softened butter and powdered sugar together until light and fluffy, approximately 3-5 minutes.
  3. Stir in the vanilla extract.
  4. Gradually add the all-purpose flour, almond flour, and salt, mixing until just combined.
  5. Flatten a small ball of dough, place a few blueberries in the center, and fold the dough around the fruit before rolling into a smooth ball.
  6. Arrange the cookies on a parchment-lined baking sheet, allowing space between them.
  7. Bake for 12-15 minutes or until the edges are golden brown.
  8. Let the cookies cool before dusting them generously with powdered sugar.

Notes

You can refrigerate the dough for up to 2 days before baking. Consider trying these in an air fryer for a crispy exterior.
