Description

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 cup semisweet chocolate chips
  • 2 tablespoons butter

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together butter, granulated sugar, and brown sugar in a large bowl using an electric mixer until light and fluffy—about 3-5 minutes.
  3. Add the eggs, one at a time, beating well after each addition. Incorporate the vanilla extract until just combined.
  4. Whisk together flour, baking soda, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Using a cookie scoop, drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes until the edges are golden and the centers are set.
  8. Allow to cool on the baking sheet for a couple of minutes before transferring to a wire rack to cool completely.
  9. Beat heavy cream and powdered sugar together until stiff peaks form for the filling.
  10. Spoon or pipe onto the bottom half of a cookie and sandwich with another cookie.
  11. For the glaze, melt chocolate chips and butter together until smooth.
  12. Drizzle over or dip the assembled cookies into the chocolate glaze and let set before serving.
