Description

Delightful buttermilk pecan pralines with a creamy, caramel-like base and a crunchy pecan texture, perfect for any occasion.


Ingredients

  • 1 cup buttermilk
  • 2 cups granulated sugar
  • 1 cup chopped pecans
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Combine ingredients: In a heavy-bottomed saucepan, mix together the buttermilk, sugar, butter, and salt. Gently stir until well combined.
  2. Heat mixture: Place the saucepan over medium heat. Stir frequently, allowing the mixture to come to a rolling boil.
  3. Monitor temperature: Once boiling, reduce your stirring frequency. Use the candy thermometer to monitor the temperature, aiming for the soft ball stage, approximately 238°F.
  4. Add pecans and vanilla: Remove the saucepan from heat and stir in the chopped pecans and vanilla extract.
  5. Scoop and cool: Allow the mixture to cool for 1-2 minutes, then drop spoonfuls onto sheets of wax paper. Let cool completely before serving.

Notes

Store pralines in an airtight container at room temperature for up to a week or refrigerate for up to two weeks.
