- 1 cup buttermilk
- 2 cups granulated sugar
- 1 cup chopped pecans
- 1/2 cup unsalted butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Combine ingredients: In a heavy-bottomed saucepan, mix together the buttermilk, sugar, butter, and salt. Gently stir until well combined.
- Heat mixture: Place the saucepan over medium heat. Stir frequently, allowing the mixture to come to a rolling boil.
- Monitor temperature: Once boiling, reduce your stirring frequency. Use the candy thermometer to monitor the temperature, aiming for the soft ball stage, approximately 238°F.
- Add pecans and vanilla: Remove the saucepan from heat and stir in the chopped pecans and vanilla extract.
- Scoop and cool: Allow the mixture to cool for 1-2 minutes, then drop spoonfuls onto sheets of wax paper. Let cool completely before serving.
Notes
Store pralines in an airtight container at room temperature for up to a week or refrigerate for up to two weeks.
