Description

Deliciously moist bars combining butterscotch and zucchini for a sweet treat with a hidden veggie twist.


Ingredients

  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 cup butterscotch chips
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Mix the melted butter, brown sugar, and granulated sugar together until glossy.
  3. Add eggs and vanilla extract to the butter mixture, whisking until smooth.
  4. Fold the grated zucchini into the mixture, ensuring even incorporation.
  5. Whisk together flour, baking soda, salt, and ground cinnamon in another bowl.
  6. Gradually fold the dry mix into the wet ingredients until just combined.
  7. Carefully add the butterscotch chips and fold them in gently.
  8. Pour the batter into the prepared pan and spread it evenly.
  9. Bake for 25-30 minutes, or until a toothpick comes out clean.
  10. Allow to cool completely before slicing into squares.
