- 1/2 cup butterscotch chips
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Mix the melted butter, brown sugar, and granulated sugar together until glossy.
- Add eggs and vanilla extract to the butter mixture, whisking until smooth.
- Fold the grated zucchini into the mixture, ensuring even incorporation.
- Whisk together flour, baking soda, salt, and ground cinnamon in another bowl.
- Gradually fold the dry mix into the wet ingredients until just combined.
- Carefully add the butterscotch chips and fold them in gently.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick comes out clean.
- Allow to cool completely before slicing into squares.
