Description

A vibrant and refreshing pasta salad featuring cheese tortellini, cherry tomatoes, mozzarella, and fresh basil, all tossed in a tangy balsamic vinaigrette.


Ingredients

  • 1 package cheese tortellini
  • 1 pint cherry tomatoes, halved
  • 1 cup mozzarella balls (bocconcini)
  • 1/2 cup fresh basil leaves
  • 1/4 cup balsamic vinaigrette
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini: Bring a large pot of salted water to a boil and cook the cheese tortellini according to package instructions until they float, about 3-5 minutes. Drain and rinse under cold water.
  2. Combine ingredients: In a large mixing bowl, gently fold in the cooled tortellini, halved cherry tomatoes, and mozzarella balls.
  3. Add fresh basil: Tear the basil leaves and add to the bowl.
  4. Dress the salad: Drizzle balsamic vinaigrette and olive oil over the salad. Season with salt and pepper.
  5. Toss gently: Mix everything together to coat the ingredients in the dressing.
