- 1 pint cherry tomatoes, halved
- 1 cup mozzarella balls (bocconcini)
- 1/2 cup fresh basil leaves
- 1/4 cup balsamic vinaigrette
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Cook the tortellini: Bring a large pot of salted water to a boil and cook the cheese tortellini according to package instructions until they float, about 3-5 minutes. Drain and rinse under cold water.
- Combine ingredients: In a large mixing bowl, gently fold in the cooled tortellini, halved cherry tomatoes, and mozzarella balls.
- Add fresh basil: Tear the basil leaves and add to the bowl.
- Dress the salad: Drizzle balsamic vinaigrette and olive oil over the salad. Season with salt and pepper.
- Toss gently: Mix everything together to coat the ingredients in the dressing.
- Serve or chill: Enjoy immediately or let sit in the refrigerator for a couple of hours.
