- 1 can Rotel tomatoes (diced)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 8 soft tortillas
- 1/2 onion (chopped)
- 1 tablespoon taco seasoning
- Salt and pepper to taste
- Optional toppings: sour cream, fresh lettuce, chopped tomatoes, avocado
Instructions
- Heat your skillet over medium heat. Add the ground beef and break it apart with a wooden spoon as it cooks for 5-7 minutes.
- Toss in the chopped onion and sauté until softened, about 3-4 minutes.
- Stir in the diced Rotel tomatoes and sprinkle the taco seasoning over the beef, simmering gently for about 5 minutes.
- Warm the tortillas in a separate pan or microwave for about 30 seconds.
- Fill a warm tortilla with the beef mixture and sprinkle shredded cheese on top. Fold the tortilla.
- Personalize your tacos with optional toppings such as sour cream, lettuce, tomatoes, and avocado.
Notes
Prep the beef mixture ahead of time and store in the refrigerator for up to 3 days. Customize with jalapeños or different cheeses for added flavor.
