Description

Deliciously cheesy and savory tacos filled with seasoned ground beef, zesty Rotel tomatoes, and melty cheese, wrapped in soft tortillas.


Ingredients

  • 1 lb ground beef
  • 1 can Rotel tomatoes (diced)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 8 soft tortillas
  • 1/2 onion (chopped)
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Optional toppings: sour cream, fresh lettuce, chopped tomatoes, avocado

Instructions

  1. Heat your skillet over medium heat. Add the ground beef and break it apart with a wooden spoon as it cooks for 5-7 minutes.
  2. Toss in the chopped onion and sauté until softened, about 3-4 minutes.
  3. Stir in the diced Rotel tomatoes and sprinkle the taco seasoning over the beef, simmering gently for about 5 minutes.
  4. Warm the tortillas in a separate pan or microwave for about 30 seconds.
  5. Fill a warm tortilla with the beef mixture and sprinkle shredded cheese on top. Fold the tortilla.
  6. Personalize your tacos with optional toppings such as sour cream, lettuce, tomatoes, and avocado.

Notes

Prep the beef mixture ahead of time and store in the refrigerator for up to 3 days. Customize with jalapeños or different cheeses for added flavor.
