Description

A comforting warm sandwich filled with tender chicken, creamy avocado, and melted cheese, perfect for lunch or a casual dinner.


Ingredients

  • 2 slices of your favorite bread (sourdough or ciabatta recommended)
  • 1 cup cooked chicken, shredded
  • 1 ripe avocado, mashed
  • 1 cup shredded cheese (sharp cheddar or mozzarella)
  • Salt and pepper to taste
  • Butter for grilling

Instructions

  1. Preheat your skillet over medium heat.
  2. Combine the shredded chicken, mashed avocado, salt, and pepper in a mixing bowl.
  3. Spread the chicken and avocado mixture on one slice of bread and layer with shredded cheese.
  4. Top with the second slice of bread, pressing slightly.
  5. Butter the outside of both slices of bread.
  6. Grill the sandwich for about 3-4 minutes on each side.
  7. Slice and serve warm.

Notes

You can prep the filling in advance and store in the fridge for up to 24 hours. Experiment with different cheeses and add fresh herbs for extra flavor.
