- 2 boneless, skinless chicken breasts
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Cooked pasta (spaghetti or fettuccine)
Instructions
- Heat the olive oil in a large skillet over medium heat until it shimmers.
- Season both sides of the chicken breasts with salt and pepper. Place them in the skillet and cook for 6-7 minutes on each side until golden brown. Remove and set aside.
- Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.
- Toss in the fresh spinach, stirring until it wilts.
- Pour in the heavy cream and bring it to a gentle simmer.
- Stir in the grated Parmesan cheese until it melts.
- Slice the cooked chicken breasts and return them to the skillet, coating in the creamy sauce.
- Serve over your choice of cooked pasta, garnished with extra Parmesan.
Notes
Make the sauce a day in advance for convenience. Use an air fryer for quicker chicken preparation if needed.
