Description

A delightful appetizer or light meal featuring ground chicken and fresh vegetables wrapped in crisp lettuce leaves.

Ingredients

Scale
  • 1 lb ground chicken
  • 1 cup peanuts, chopped
  • 1 red bell pepper, diced
  • 1 carrot, grated
  • 1 cucumber, shredded
  • 1/4 cup green onions, chopped
  • 1 head of lettuce (like iceberg or butter lettuce)
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger

Instructions

  1. Heat a non-stick skillet over medium heat. Once hot, add the ground chicken. Cook it thoroughly, breaking it apart with a spatula until browned and cooked through—approximately 5-7 minutes.
  2. Fold in the chopped peanuts, diced red pepper, grated carrot, and shredded cucumber. Sauté for an additional 2-3 minutes until the veggies soften slightly.
  3. Grab a mixing bowl. Whisk together soy sauce, hoisin sauce, sesame oil, rice vinegar, minced garlic, and ginger until fully combined and smooth.
  4. Pour the sauce over the chicken and vegetable mixture. Stir until every morsel is generously coated in the delicious sauce.
  5. Remove the skillet from heat and let the filling cool slightly, allowing the flavors to meld beautifully.
  6. Take a crisp lettuce leaf and spoon generous portions of the savory filling inside. Garnish with chopped green onions for an extra touch of flavor.
  7. Enjoy the delightful moment when your friends or family take their first bite.

Notes

The filling can be prepared a day in advance. Store it in an airtight container in the refrigerator for maximum freshness.
