Description

A delightful and easy-to-make foil packet meal that combines tender chicken, flavorful sausage, fresh vegetables, and crispy potatoes.


Ingredients

  • 2 chicken breasts, cut into bite-sized pieces
  • 2 sausages, sliced
  • 2 cups potatoes, diced
  • 2 cups broccoli florets
  • 1 cup corn (fresh or frozen)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Aluminum foil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Tear large pieces of aluminum foil, about 12-inch squares.
  3. Combine the chicken, sausage, potatoes, broccoli, and corn in a large mixing bowl.
  4. Drizzle with olive oil and sprinkle with garlic powder, salt, and pepper, then toss to coat.
  5. Divide the mixture evenly across the foil sheets.
  6. Fold the sides of the foil over the mixture and seal tightly.
  7. Place the packets on a baking sheet and bake for 25-30 minutes.
  8. Remove from the oven and carefully open the packets to release steam.

Notes

You can prepare the packets in advance and refrigerate before baking. Feel free to customize the vegetables based on what you have on hand.
