- 2 salmon fillets
- 2 tablespoons chipotle sauce
- 1 tablespoon honey
- 8 small corn tortillas
- 1 cup fresh pineapple, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- Salt to taste
Instructions
- Preheat the grill to medium-high heat.
- Mix together chipotle sauce and honey in a small bowl.
- Brush the salmon fillets with the chipotle honey mixture.
- Grill the salmon for about 5-6 minutes on each side or until cooked through.
- Combine diced pineapple, red onion, cilantro, lime juice, and salt in another bowl to make the salsa.
- Heat the corn tortillas on the grill for about 30 seconds on each side.
- Slice the grilled salmon and divide it among the tortillas.
- Top the salmon with pineapple salsa and serve immediately.
Notes
You can prepare the chipotle honey mixture and pineapple salsa a few hours in advance for better flavor.
