Description

Delicious tacos filled with grilled salmon, chipotle honey glaze, and vibrant pineapple salsa, perfect for a summer meal.


Ingredients

  • 2 salmon fillets
  • 2 tablespoons chipotle sauce
  • 1 tablespoon honey
  • 8 small corn tortillas
  • 1 cup fresh pineapple, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • Salt to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Mix together chipotle sauce and honey in a small bowl.
  3. Brush the salmon fillets with the chipotle honey mixture.
  4. Grill the salmon for about 5-6 minutes on each side or until cooked through.
  5. Combine diced pineapple, red onion, cilantro, lime juice, and salt in another bowl to make the salsa.
  6. Heat the corn tortillas on the grill for about 30 seconds on each side.
  7. Slice the grilled salmon and divide it among the tortillas.
  8. Top the salmon with pineapple salsa and serve immediately.

Notes

You can prepare the chipotle honey mixture and pineapple salsa a few hours in advance for better flavor.
