- 500g Bread Flour
- 300g Sourdough Starter
- 200g Water
- 50g Cocoa Powder
- 100g Sugar
- 10g Salt
- 150g Dark Chocolate (chopped)
- Optional: Butter for Toasting
Instructions
- Combine the bread flour, cocoa powder, and sugar in a large mixing bowl and whisk until evenly mixed.
- Mix the sourdough starter with water in a separate bowl until well blended.
- Pour the wet mixture into the dry ingredients, stirring gently with a wooden spoon until a shaggy dough forms.
- Knead the dough for about 10-15 minutes on a floured surface until smooth and elastic.
- Add the salt and knead for an additional 5 minutes.
- Fold in the chopped dark chocolate until evenly distributed.
- Place the dough in a lightly greased bowl, cover, and let it rise at room temperature until doubled in size (4-6 hours).
- Punch down the dough to release air bubbles, shape it into a loaf, and place it in a prepared loaf pan.
- Cover the loaf again and let it rise for an additional 1-2 hours until puffed up.
- Preheat your oven to 450°F (230°C).
- Bake for 30-35 minutes, until it sounds hollow when tapped on the bottom.
- Cool in the pan for 10 minutes, then transfer to a cooling rack.
- Serve with butter or enjoy fresh.
Notes
For best results, prepare your sourdough starter the night before. Allow adequate rising time to enhance flavor development.
