Description

A vibrant, flavorful meal featuring tender chicken in a zesty lime and cilantro sauce served over fluffy rice with black beans and sweet corn.


Ingredients

  • 1 cup rice
  • 2 cups chicken broth
  • 1 lb chicken breast, diced
  • 1 cup black beans, drained and rinsed
  • 1 cup sweet corn, frozen or canned
  • 1 red bell pepper, diced
  • 1/2 cup cilantro, chopped
  • Juice of 2 limes
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a spacious skillet over medium heat.
  2. Sauté the diced chicken breast, adding salt and pepper, until golden brown—about 5-7 minutes.
  3. Combine the rice, black beans, corn, and diced red bell pepper into the skillet.
  4. Add the chicken broth and bring to a boil.
  5. Simmer on low heat, covered, for about 15 minutes.
  6. Finish with lime juice and folded cilantro.

Notes

Consider using brown rice for added fiber and a nutty flavor. Rinse canned beans to reduce sodium before use.
