Instructions
- Heat the olive oil in a spacious skillet over medium heat.
- Sauté the diced chicken breast, adding salt and pepper, until golden brown—about 5-7 minutes.
- Combine the rice, black beans, corn, and diced red bell pepper into the skillet.
- Add the chicken broth and bring to a boil.
- Simmer on low heat, covered, for about 15 minutes.
- Finish with lime juice and folded cilantro.
