Description

A tropical delight with tender chicken in creamy coconut milk and zesty lime, paired with fluffy rice.


Ingredients

  • 1 lb boneless, skinless chicken breasts (or thighs)
  • 1 cup coconut milk
  • 1 lime (juiced and zested)
  • 1 cup long-grain white rice (or jasmine rice)
  • 2 cups chicken broth (or vegetable broth for vegetarian option)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the skillet: In a large skillet, heat the olive oil over medium heat until it shimmers invitingly.
  2. Sauté garlic: Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add chicken: Season the chicken breasts with salt and pepper, and add them to the skillet. Sear the chicken for about 5-7 minutes on each side until golden brown.
  4. Incorporate coconut milk and lime: Stir in the coconut milk, lime juice, and zest, scraping up any flavorful bits from the bottom of the skillet.
  5. Add rice and broth: Introduce the rice and pour in the chicken broth. Bring to a gentle boil.
  6. Simmer: Once boiling, cover the skillet and reduce the heat to low. Simmer for 20 minutes until the rice absorbs the liquid and the chicken cooks through.
  7. Finish and serve: Remove from heat, fluff the rice gently with a fork, and garnish with cilantro.

Notes

For deeper flavor, marinate the chicken ahead of time. Can substitute chicken with firm tofu or chickpeas for a vegetarian version.
