- 1 lime (juiced and zested)
- 1 cup long-grain white rice (or jasmine rice)
- 2 cups chicken broth (or vegetable broth for vegetarian option)
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the skillet: In a large skillet, heat the olive oil over medium heat until it shimmers invitingly.
- Sauté garlic: Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add chicken: Season the chicken breasts with salt and pepper, and add them to the skillet. Sear the chicken for about 5-7 minutes on each side until golden brown.
- Incorporate coconut milk and lime: Stir in the coconut milk, lime juice, and zest, scraping up any flavorful bits from the bottom of the skillet.
- Add rice and broth: Introduce the rice and pour in the chicken broth. Bring to a gentle boil.
- Simmer: Once boiling, cover the skillet and reduce the heat to low. Simmer for 20 minutes until the rice absorbs the liquid and the chicken cooks through.
- Finish and serve: Remove from heat, fluff the rice gently with a fork, and garnish with cilantro.
Notes
For deeper flavor, marinate the chicken ahead of time. Can substitute chicken with firm tofu or chickpeas for a vegetarian version.
