Description

A refreshing summer salad combining sweet corn, crisp cucumbers, fresh basil, and chives, all enveloped in a creamy dressing.


Ingredients

  • 3 cups Cooked Corn
  • 1.5 cups Cucumber, peeled and seeded
  • 0.5 cups Fresh Basil, chopped
  • 0.25 cups Fresh Chives, chopped
  • 2 tablespoons Mayonnaise

Instructions

  1. Cook the Corn: If using fresh corn, shuck and boil in salted water for 3-5 minutes until tender. Drain and cool.
  2. Prepare the Vegetables: Peel and seed cucumbers, then slice into thin rounds.
  3. Chop the Herbs: Finely chop fresh basil and chives.
  4. Combine Ingredients: In a mixing bowl, combine cooked corn, cucumbers, and herbs.
  5. Make the Dressing: Whisk mayonnaise, salt, and pepper in a bowl until smooth.
  6. Dress the Salad: Pour dressing over the mixture and fold gently.
