Description

A tropical delight of fluffy jasmine rice combined with creamy coconut milk and juicy pineapple, topped with toasted coconut flakes.


Ingredients

  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 cup water
  • 1 cup pineapple chunks
  • 1/4 cup toasted coconut flakes
  • Salt to taste
  • Chopped herbs (such as cilantro or mint) for garnish

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Combine the rinsed rice, coconut milk, water, and a pinch of salt in a medium saucepan.
  3. Bring the mixture to a gentle boil over medium heat.
  4. Simmer by reducing the heat to low, cover the pan, and let it cook for about 15-20 minutes.
  5. Fluff the rice with a fork and fold in the pineapple chunks.
  6. Serve the rice warm, topped with toasted coconut flakes and garnished with fresh herbs.
