- 1 cup coconut milk
- 1 cup water
- 1 cup pineapple chunks
- 1/4 cup toasted coconut flakes
- Salt to taste

Instructions
- Rinse the rice under cold water until the water runs clear.
- Combine the rinsed rice, coconut milk, water, and a pinch of salt in a medium saucepan.
- Bring the mixture to a gentle boil over medium heat.
- Simmer by reducing the heat to low, cover the pan, and let it cook for about 15-20 minutes.
- Fluff the rice with a fork and fold in the pineapple chunks.
- Serve the rice warm, topped with toasted coconut flakes and garnished with fresh herbs.
