Instructions
- Heat the olive oil in a large skillet over medium heat until it shimmers.
- Prepare the chicken breasts by seasoning them with salt and pepper and browning them for about 5-7 minutes per side.
- Remove the chicken and set aside.
- Sauté the minced garlic and sliced mushrooms in the same skillet until tender, about 3-4 minutes.
- Add the heavy cream and gently stir to combine, then fold in the spinach until wilted and the sauce thickens, about 2-3 minutes.
- Return the cooked chicken to the skillet, coating it in the creamy sauce.
- Serve the chicken over pasta, rice, or mashed potatoes and enjoy!
