Description

A luxurious pasta dish featuring jerk-seasoned chicken, bell peppers, and a creamy sauce that captures the essence of Caribbean cuisine.


Ingredients

  • 8 oz pasta (penne or fettuccine)
  • 1 lb boneless, skinless chicken breast
  • Jerk seasoning to taste
  • 1 cup heavy cream
  • 1 cup bell peppers (red, yellow, green), sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil, add pasta, cook until al dente, then drain and set aside.
  2. Sauté the Chicken: Heat olive oil in a skillet, add jerk-seasoned chicken, brown for about 5-7 minutes until cooked through, then remove from skillet.
  3. Sauté the Aromatics: In the same skillet, add sliced onion and minced garlic, sauté for 2-3 minutes until onion is translucent.
  4. Add the Veggies: Stir in sliced bell peppers, cooking for another 3-4 minutes.
  5. Create the Sauce: Pour in heavy cream, stir to combine, and simmer for a few minutes.
  6. Mix It All Together: Return cooked pasta and chicken to the skillet, toss to combine, season with salt and pepper.
  7. Serve: Transfer to serving plates or a large bowl, garnish with fresh parsley.

Notes

Marinate the chicken in jerk seasoning ahead of time for deeper flavor. Customize with your favorite vegetables and proteins.
