- 1 tablespoon butter
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken bone broth
- 8 oz cream cheese
- 1 lb Italian sausage (mild or hot)
- 1 can (14 oz) diced tomatoes
- 1 small zucchini, chopped
- 2 cups chopped spinach
- Seasonings: dried basil, oregano, bay leaf, cayenne pepper
Instructions
- Melt the butter in a large pot over medium-high heat until it bubbles softly.
- Add the chopped onion and minced garlic to the pot. Stir frequently until the onion turns soft and translucent, about 3-4 minutes.
- Push the onions aside and add the Italian sausage. Break it apart with your wooden spoon, cooking until fully browned, about 5-7 minutes.
- Pour in three cups of chicken bone broth and add the chopped zucchini, diced tomatoes, dried basil, oregano, bay leaf, and a pinch of cayenne pepper. Raise the heat and bring the mixture to a rolling boil, then reduce to a simmer for 15-20 minutes.
- Blend the remaining cup of bone broth with the cream cheese until smooth, then stir this mixture back into the soup.
- Mix in the chopped spinach just before serving, stirring until just wilted.
- Ladle the soup into bowls and enjoy its creamy goodness!
Notes
This soup can be prepared a day in advance and tastes even better after sitting overnight in the fridge.
