Description

A rich and creamy soup featuring Italian sausage, tender zucchini, and vibrant spinach, perfect for cozy nights.


Ingredients

  • 1 tablespoon butter
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken bone broth
  • 8 oz cream cheese
  • 1 lb Italian sausage (mild or hot)
  • 1 can (14 oz) diced tomatoes
  • 1 small zucchini, chopped
  • 2 cups chopped spinach
  • Seasonings: dried basil, oregano, bay leaf, cayenne pepper

Instructions

  1. Melt the butter in a large pot over medium-high heat until it bubbles softly.
  2. Add the chopped onion and minced garlic to the pot. Stir frequently until the onion turns soft and translucent, about 3-4 minutes.
  3. Push the onions aside and add the Italian sausage. Break it apart with your wooden spoon, cooking until fully browned, about 5-7 minutes.
  4. Pour in three cups of chicken bone broth and add the chopped zucchini, diced tomatoes, dried basil, oregano, bay leaf, and a pinch of cayenne pepper. Raise the heat and bring the mixture to a rolling boil, then reduce to a simmer for 15-20 minutes.
  5. Blend the remaining cup of bone broth with the cream cheese until smooth, then stir this mixture back into the soup.
  6. Mix in the chopped spinach just before serving, stirring until just wilted.
  7. Ladle the soup into bowls and enjoy its creamy goodness!

Notes

This soup can be prepared a day in advance and tastes even better after sitting overnight in the fridge.
