Description

Ingredients

  • 4 cups corn (fresh, frozen, or canned)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup cotija cheese (crumbled)
  • 1/4 cup cilantro (chopped)
  • 1/2 teaspoon chili powder
  • 1 lime (juiced)
  • Salt and pepper to taste

Instructions

  1. Prepare the corn: If using fresh corn, grill the cobs until charred, then cool and cut the kernels off the cob. For frozen corn, cook according to package instructions. If using canned corn, drain and rinse thoroughly.
  2. Combine the dressing: In a large mixing bowl, whisk together the mayonnaise, sour cream, cotija cheese, cilantro, chili powder, and lime juice. Season with salt and pepper to taste.
  3. Mix it all together: Gently fold the prepared corn into the dressing until coated evenly.
  4. Let it chill: Cover the bowl and chill in the refrigerator for at least 30 minutes.
