- 8 oz pasta (penne or fettuccine)
- 1 lb Cajun sausage (or andouille sausage), sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 tbsp Cajun seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
- Grated Parmesan cheese (for serving)
- Fresh parsley (for garnish)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the sliced sausage and cook for about 4-5 minutes until golden brown.
- Add the diced onion, bell pepper, and minced garlic. Sauté for about 3-4 minutes until they soften.
- Stir in the uncooked pasta, chicken broth, heavy cream, and Cajun seasoning. Season with salt and pepper to taste, then bring to a rolling boil.
- Reduce the heat to low and cover the pot. Let it simmer for 10-12 minutes until pasta is al dente, stirring occasionally.
- Ladle the pasta into bowls and top with grated Parmesan cheese and fresh parsley. Serve warm.
Notes
You can make the sausage mixture ahead and store it in the refrigerator. For a baked version, transfer to a casserole dish and bake at 350°F for 20-25 minutes.
