- 8 oz Mushrooms (cremini or shiitake)
- 2 tbsp Olive Oil
- 2–3 cloves Garlic (minced)
- 2 cups Fresh Spinach
- 1 cup Heavy Cream
- 1/2 cup Parmesan Cheese (freshly grated)
- Salt and Pepper (to taste)
Instructions
- Boil the pasta: Fill a large pot with water, season it with salt, and bring it to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a splash of pasta water.
- Sauté the mushrooms: In a large skillet, heat olive oil over medium heat, add mushrooms, and caramelize until golden brown (5-7 minutes).
- Add garlic: Toss in minced garlic and stir, cooking for about 30 seconds until fragrant.
- Incorporate spinach: Add fresh spinach, stirring until it wilts down.
- Create the cream sauce: Pour in the heavy cream, allowing it to bubble gently. Simmer for a few minutes until it thickens.
- Combine everything: Add the cooked pasta to the skillet, tossing to coat with the sauce. If too thick, add reserved pasta water.
- Finish with Parmesan: Stir in grated Parmesan until melted. Adjust seasoning with salt and pepper.
- Serve warm: Dish up immediately and garnish with additional Parmesan if desired.
Notes
For lighter version, substitute heavy cream with half-and-half or vegetable broth. Can add protein like grilled chicken or shrimp.
