Description

Hearty crock pot dish blending creamy potatoes, smoky sausage, and fresh green beans for a comforting meal.


Ingredients

Scale
  • 2 pounds potatoes, diced (russet or Yukon Gold)
  • 1 pound smoked sausage, sliced (Andouille or kielbasa)
  • 1 pound green beans, trimmed
  • 1 onion, chopped
  • 4 cups chicken broth
  • Salt and pepper to taste
  • Optional: garlic powder and paprika

Instructions

  1. Place the diced potatoes and sliced sausage in the crock pot.
  2. Add the chopped onion on top.
  3. Arrange the trimmed green beans atop the other ingredients.
  4. Pour in the chicken broth to cover the ingredients.
  5. Season with salt, pepper, and optional spices.
  6. Stir gently to combine without mashing the potatoes.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours until the potatoes are fork-tender.

Notes

Prep ingredients the night before to save time. You can substitute the sausage with chicken or a vegetarian option.
