Description

A hearty and comforting soup made with beef, barley, and a medley of vegetables, perfect for chilly evenings.


Ingredients

  • 1 pound beef stew meat
  • 1 cup barley
  • 3 potatoes, diced
  • 2 carrots, sliced
  • 1 onion, chopped
  • 4 cups beef broth
  • 2 cups water
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Combine the beef stew meat, barley, diced potatoes, sliced carrots, and chopped onion in the slow cooker.
  2. Pour in the beef broth and water, mixing everything well.
  3. Season with garlic powder, dried thyme, salt, and pepper, stirring to combine.
  4. Cover the slow cooker and set it to low, cooking for 8 hours.
  5. Taste the soup towards the end, adjusting seasoning if needed.
  6. Ladle the soup into bowls and garnish with fresh herbs if desired.

Notes
