Description

A refreshing salad combining juicy strawberries and crisp cucumbers, drizzled with a zesty dressing, perfect for summer picnics.


Ingredients

  • 1 cup strawberries, hulled and sliced
  • 1 large English cucumber, thinly sliced
  • 1/4 cup crumbled feta or goat cheese (optional)
  • 2 tbsp chopped fresh mint or basil
  • 2 tbsp slivered almonds, sunflower seeds, or walnuts (toasted, optional)
  • 1 tbsp fresh lemon juice or balsamic vinegar
  • 1 tsp honey or maple syrup
  • 2 tbsp olive oil
  • Salt and black pepper, to taste

Instructions

  1. Prepare the ingredients by washing and drying your strawberries and cucumbers thoroughly. Hull the strawberries and slice them into bite-sized pieces. For the cucumbers, slice them thinly.
  2. Mix the dressing by whisking together lemon juice, honey, olive oil, salt, and pepper in a small bowl or mason jar.
  3. Assemble the salad in a large mixing bowl with the sliced cucumbers, strawberries, fresh herbs, and crumbled cheese (if using).
  4. Toss lightly by drizzling half of the dressing over the mixture and gently combining.
  5. Garnish the salad with toasted nuts or seeds and any remaining herbs before serving. Enjoy immediately for the best flavors.
