Description

Delicious bite-sized sushi cups filled with fresh vegetables, creamy avocado, and savory sauce, perfect for gatherings or family dinners.


Ingredients

  • 1.25 cups Water
  • 2 cups Finely Chopped Veggies (carrots, cucumber, bell peppers)
  • 1 cup Steamed Mukimame
  • 1 medium Diced Avocado
  • 3 tablespoons Soy Sauce or Tamari
  • 0.25 cup Mayonnaise
  • 1 tablespoon Sriracha Sauce
  • 1 teaspoon Honey
  • 0.5 teaspoon Sesame Oil
  • 1 tablespoon Black Sesame Seeds

Instructions

  1. Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. Then, combine with 1.25 cups of water in a rice cooker or pot. Cook until tender and fluffy according to package instructions. Allow it to cool completely.
  2. Chop Your Veggies: While the rice cools, finely chop your choice of vegetables. Aim for uniform bite-sized pieces to ensure they layer well in the cups.
  3. Mix the Sauce: In a bowl, mix together your choice of soy sauce, mayonnaise, sriracha, honey, and sesame oil. This creamy and spicy sauce is the heart of your sushi cups—make sure to taste it!
  4. Layer the Cups: In cupcake liners or small bowls, begin layering. Start with a scoop of sushi rice, followed by a generous layer of chopped veggies, mukimame, and diced avocado. Drizzle the creamy sauce over each layer.
  5. Finish & Serve: Sprinkle black sesame seeds on top for a beautiful touch. Serve your sushi cups immediately, or chill them slightly to allow the flavors to meld even more.
