- 0.5 cup full-fat Greek yogurt (unsweetened, plain)
- 1 tablespoon baking powder
- 0.25 cup melted butter or coconut oil
- 0.25 teaspoon salt
- 0.5 teaspoon xanthan gum or psyllium husk powder
- 0.5 cup finely ground almond flour
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan or line with parchment paper.
- Crack the eggs into a large mixing bowl and whisk them until frothy and pale, about 2-3 minutes.
- Blend in the full-fat Greek yogurt and melted butter or coconut oil until smooth.
- Mix together the baking powder, salt, xanthan gum, and almond flour in a separate bowl.
- Add the dry mixture to the wet ingredients, folding gently until combined.
- Pour the batter into the prepared loaf pan, smoothing the top.
- Bake for 30-35 minutes until golden brown and a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
Notes
For a dairy-free version, substitute Greek yogurt with coconut yogurt. You can also use avocado oil instead of butter.
