- 1/2 cup green olives, sliced
- 1/2 cup black olives, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 2 tablespoons olive brine
- 1 tablespoon lemon juice
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Cook the pasta: Begin by bringing salted water to a rolling boil in a large pot. Cook the pasta according to the package instructions until al dente. Drain and rinse it under cold water to cool down.
- Combine ingredients: In a large mixing bowl, add the cooled pasta along with sliced green olives, black olives, halved cherry tomatoes, and finely chopped red onion. Toss gently.
- Mix the dressing: In a separate bowl, whisk together the mayonnaise, olive brine, lemon juice, and chopped parsley until smooth.
- Dress the pasta: Pour the dressing over the pasta salad and gently toss to coat.
- Season: Add salt and pepper to taste, then give it another gentle toss.
- Chill: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to blend the flavors.
Notes
Try substituting Greek yogurt for the mayonnaise for a lighter version. You can also add proteins like grilled chicken or chickpeas for a heartier dish.
