Description

A refreshing and indulgent pasta salad combining the flavors of olives, cherry tomatoes, and a creamy dressing, reminiscent of a classic dirty martini.


Ingredients

  • 8 ounces pasta (rotini or fusilli)
  • 1/2 cup green olives, sliced
  • 1/2 cup black olives, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons olive brine
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Begin by bringing salted water to a rolling boil in a large pot. Cook the pasta according to the package instructions until al dente. Drain and rinse it under cold water to cool down.
  2. Combine ingredients: In a large mixing bowl, add the cooled pasta along with sliced green olives, black olives, halved cherry tomatoes, and finely chopped red onion. Toss gently.
  3. Mix the dressing: In a separate bowl, whisk together the mayonnaise, olive brine, lemon juice, and chopped parsley until smooth.
  4. Dress the pasta: Pour the dressing over the pasta salad and gently toss to coat.
  5. Season: Add salt and pepper to taste, then give it another gentle toss.
  6. Chill: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to blend the flavors.

Notes

Try substituting Greek yogurt for the mayonnaise for a lighter version. You can also add proteins like grilled chicken or chickpeas for a heartier dish.
