Description

A comforting and flavorful bowl of dumplings in rich broth, topped with fresh greens and soft-boiled egg.


Ingredients

  • Dumplings (frozen or homemade)
  • Ramen noodles (instant, fresh, or dried)
  • Soft-boiled eggs
  • Fresh greens (spinach, bok choy, or kale)
  • Chicken or vegetable broth
  • Green onions
  • Soy sauce
  • Sesame oil
  • Salt
  • Pepper

Instructions

  1. Cook your dumplings according to package instructions. Set aside, ensuring they stay warm and tender.
  2. Bring the broth to a gentle simmer in a large pot.
  3. Add ramen noodles and cook according to package directions, stirring occasionally.
  4. Carefully boil the soft-boiled eggs for 6-7 minutes, then transfer them to an ice bath.
  5. Fold in dumplings and fresh greens when noodles are almost ready, stirring until the greens wilt.
  6. Season the broth with soy sauce, sesame oil, salt, and pepper to taste.
  7. Serve the ramen in bowls, halving soft-boiled eggs and placing them on top, garnished with green onions.

Notes

Store leftovers in the fridge for up to three days. Freeze the broth and noodles separately for up to a month.
