Ingredients

Scale
  • 4 large eggs
  • 1 cup cooked sausage, sliced
  • 2 cups frozen hash browns
  • 1 cup bell peppers, diced
  • 1 small onion, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large skillet over medium heat until shimmering.
  2. Sauté the chopped onion and diced bell peppers for 3-4 minutes until softened.
  3. Crisp the frozen hash browns by spreading them in the skillet and cooking for 5-7 minutes until golden brown.
  4. Add the sliced sausage, mixing well with the vegetables.
  5. Create four small wells in the mixture and crack an egg into each well.
  6. Cover the skillet and cook for about 5-6 minutes until the egg whites are set and yolks are runny.
  7. Season with salt and pepper and add shredded cheese and herbs if desired before serving.

Notes
