- 2 cups frozen hash browns
- 1 cup bell peppers, diced

Instructions
- Heat the oil in a large skillet over medium heat until shimmering.
- Sauté the chopped onion and diced bell peppers for 3-4 minutes until softened.
- Crisp the frozen hash browns by spreading them in the skillet and cooking for 5-7 minutes until golden brown.
- Add the sliced sausage, mixing well with the vegetables.
- Create four small wells in the mixture and crack an egg into each well.
- Cover the skillet and cook for about 5-6 minutes until the egg whites are set and yolks are runny.
- Season with salt and pepper and add shredded cheese and herbs if desired before serving.
