- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Juice of 1 lemon
- 3 cloves garlic, minced
- 1 can chickpeas, drained and rinsed
- 1/2 cup black olives, sliced
- 1/2 cup feta cheese, crumbled
- 1 cucumber, chopped
- 2 tomatoes, diced
- Salt, to taste
- Pepper, to taste
- 1 teaspoon dried oregano
Instructions
- Marinate the chicken: In a mixing bowl, combine chicken breast pieces with olive oil, lemon juice, minced garlic, salt, pepper, and oregano. Mix well and let marinate for at least 30 minutes.
- Cook the chicken: Heat a skillet over medium-high heat and cook the marinated chicken for 6-7 minutes on each side until golden brown and fully cooked.
- Prepare the base: In a serving bowl, layer chickpeas, cucumber, tomatoes, olives, and feta cheese.
- Add the chicken: Slice the cooked chicken and place it on top of the veggie mix.
- Dress it up: Drizzle with olive oil and lemon juice; season with salt and pepper to taste.
- Serve fresh: Enjoy immediately, garnished with fresh herbs if desired.
