Description

A vibrant and nutritious bowl featuring marinated chicken, fresh veggies, and creamy feta, inspired by the flavors of Greece.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 can chickpeas, drained and rinsed
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1 cucumber, chopped
  • 2 tomatoes, diced
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon dried oregano

Instructions

  1. Marinate the chicken: In a mixing bowl, combine chicken breast pieces with olive oil, lemon juice, minced garlic, salt, pepper, and oregano. Mix well and let marinate for at least 30 minutes.
  2. Cook the chicken: Heat a skillet over medium-high heat and cook the marinated chicken for 6-7 minutes on each side until golden brown and fully cooked.
  3. Prepare the base: In a serving bowl, layer chickpeas, cucumber, tomatoes, olives, and feta cheese.
  4. Add the chicken: Slice the cooked chicken and place it on top of the veggie mix.
  5. Dress it up: Drizzle with olive oil and lemon juice; season with salt and pepper to taste.
  6. Serve fresh: Enjoy immediately, garnished with fresh herbs if desired.
