Instructions
- Preheat your large skillet over medium-high heat and add one tablespoon of olive oil.
- Ensure that your filet mignons reach room temperature. Generously sprinkle salt and pepper on both sides.
- Place the filets in the hot skillet and let them sear undisturbed for 3-4 minutes on each side for medium doneness.
- Remove the filets and set them aside; using the same skillet, add the remaining tablespoon of olive oil and minced garlic.
- Sauté for just a minute until fragrant.
- Stir in the Dijon mustard and heavy cream, whisking gently to blend the flavors.
- Sprinkle in the grated Parmesan cheese and stir until it melts into the sauce.
- Return the filets to the pan, allowing the sauce to embrace each piece.
