- 2 tablespoons Dijon mustard
- 2 tablespoons honey
- Juice of 1 lemon
- 1 tablespoon olive oil

Instructions
- Prepare the fish: Pat the fillets dry with a paper towel and season with salt and pepper.
- Heat a non-stick skillet over medium-high heat and add olive oil.
- Cook the fish: Place the fillets in the skillet and cook for 4-5 minutes on one side, then flip and cook for another 4-5 minutes until golden.
- Prepare the sauce: Whisk together the Dijon mustard, honey, and lemon juice in a bowl until smooth.
- Add the sauce over the fish in the skillet, cooking for an additional 1-2 minutes to meld the flavors.
- Remove the fish from the skillet and serve with a sprinkle of fresh parsley.
