- 4 Whole Wheat Wraps or Tortillas
- 1 cup Hummus
- 1 cup Feta Cheese, crumbled
- 1 cup Cucumbers, sliced
- 1 cup Red Bell Peppers, sliced
- 2 cups Spinach leaves
- 1/2 cup Kalamata Olives, diced
- 1/4 cup Fresh Herbs (Basil or Parsley), chopped
Instructions
- Prepare your ingredients by washing and chopping cucumbers and bell peppers into thin strips.
- Spread a layer of hummus across the whole wheat wrap, leaving about half an inch around the edges.
- Layer a handful of spinach, followed by cucumbers, red bell peppers, kalamata olives, and crumbled feta on one end of the wrap.
- Roll the wrap towards the edge filled with goodies, tucking the filling in as you go.
- Slice the rolled wrap into bite-sized pinwheels, about 1 to 1.5 inches thick.
- Serve the pinwheels on an attractive platter for everyone to enjoy!
