Description

  • 2 large Yellow Onions, thinly sliced
  • 1 cup Gruyère Cheese, grated
  • 2 tbsp Butter
  • 2 tbsp Olive Oil
  • 3 cloves Garlic, minced
  • 2 cups Beef or Vegetable Broth
  • Salt and Pepper to taste
  • Fresh Parsley, for garnish

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. Sauté the onions: In a large skillet, melt equal parts butter and olive oil over medium heat. Add the sliced onions along with a pinch of salt. Stir frequently, allowing them to caramelize for about 20-25 minutes, until they turn a deep golden brown.
  3. Add garlic: Stir in the minced garlic, cooking for another minute until fragrant.
  4. Create the broth: Pour in the beef or vegetable broth, bringing it to a gentle simmer.
  5. Combine pasta and broth: Toss the cooked pasta into the skillet, ensuring every strand is coated in the luscious broth.
  6. Melt in Gruyère: Remove the skillet from the heat, add the Gruyère cheese, and stir until fully melted.
  7. Season: Taste and adjust the seasoning with salt and pepper.
  8. Plate and garnish: Serve warm in bowls, garnished with chopped parsley.
