Description

A heartwarming fusion of classic French onion soup and pasta, enveloped in a rich, creamy sauce with caramelized onions and Gruyère cheese.

Ingredients

Scale
  • 8 ounces pasta (such as fettuccine or penne)
  • 2 tablespoons butter
  • 2 large onions (thinly sliced)
  • 2 cloves garlic (minced)
  • 1 teaspoon sugar
  • 1 tablespoon balsamic vinegar
  • 1 cup beef or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded Gruyère cheese
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional)

Instructions

  1. Cook the Pasta: Boil a large pot of salted water and cook the pasta according to the package instructions until al dente. Reserve a cup of pasta water before draining.
  2. sauté the Onions: In a large skillet, melt the butter over medium heat. Add the sliced onions with a pinch of salt, stirring frequently for 15-20 minutes until they become golden and caramelized.
  3. Add Garlic and Flavorings: Introduce the minced garlic, sugar, and balsamic vinegar to the skillet. Cook together for 2-3 minutes.
  4. Pour in Broth: Add the beef or vegetable broth, bringing the mixture to a gentle simmer.
  5. Create Creamy Goodness: Stir in the heavy cream along with shredded Gruyère cheese. Cook until the cheese melts and the sauce thickens.
  6. Season to Perfection: Taste the sauce and season with salt and pepper.
  7. Combine with Pasta: Toss the cooked pasta into the skillet, coating it with the luscious sauce.
  8. Serve Hot: Dish it out warm, garnished with fresh thyme.

Notes

You can slice onions and prepare the sauce ahead of time. Consider using half-and-half for a lighter option.
