Description

A delightful homemade jam featuring fresh figs and tangy raspberries, enhanced with citrus and ginger for a perfectly balanced flavor.


Ingredients

  • 2 cups fresh ripe figs, stemmed and chopped
  • 2 cups fresh raspberries
  • 1 large navel orange, zested and juiced
  • 3 Tbsp fresh ginger, finely grated
  • 4 cups granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 pouch (3 oz) liquid fruit pectin

Instructions

  1. Prepare the fresh figs by rinsing them under cold water, patting them dry, and chopping them into small pieces.
  2. Zest and juice the orange, catching any seeds.
  3. Grate the ginger finely using a microplane.
  4. Mash the figs and raspberries in a heavy-bottomed pot with a potato masher, leaving some chunks for texture.
  5. Add the orange zest and juice, along with the grated ginger, and mix.
  6. Dissolve the sugar and lemon juice in the mixture, stirring until completely dissolved.
  7. Bring the mixture to a rapid boil over medium-high heat, stirring frequently.
  8. Stir in the liquid pectin and boil for an additional minute.
  9. Test for a perfect set by placing a spoonful on a chilled plate; if it holds its shape, it’s ready.
  10. Skim any foam off the surface with a spoon.
  11. Sterilize jars by pouring boiling water into them.
  12. Fill the jars with hot jam, leaving about 1/4 inch of headspace.
  13. Process the jars in a boiling water bath for approximately 10 minutes.
  14. Cool the jars completely and check that the lids have sealed properly.

Notes

Store unopened jars in a cool, dark place. Once opened, refrigerate and consume within a few weeks. This jam can last up to a year when properly stored.
