Description

Delightful truffles that transport you back to childhood, featuring creamy cookie bites coated in white chocolate and sprinkles.


Ingredients

  • 1 large bag (11 oz) Mother’s Circus Animal Cookies
  • 1 block (8 oz) Philadelphia Cream Cheese (softened)
  • 1 package (16 oz) Plymouth Pantry Almond Bark Vanilla Baking Coating
  • 1/4 cup Betty Crocker Rainbow Nonpareils (sprinkles)

Instructions

  1. Crumb the cookies: Place the entire bag of Mother’s Circus Animal Cookies into a food processor. Pulse until fine crumbs are formed.
  2. Mix it together: In a large mixing bowl, blend the cookie crumbs with softened cream cheese using a hand mixer.
  3. Shape the truffles: Roll the mixture into 1-inch balls and place on a parchment-lined baking sheet. Freeze for about 30 minutes.
  4. Coat in chocolate: Melt the almond bark, dip each frozen ball, and sprinkle with nonpareils before the coating sets.

Notes

These truffles can be made a day in advance. Store in an airtight container in the refrigerator for up to a week.
