- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tablespoon cinnamon sugar (topping)
- Optional: 1/4 cup white chocolate, melted (drizzle)
Instructions
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
- Whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon in a large bowl.
- Combine melted butter, milk, eggs, and vanilla extract in another bowl and whisk until smooth.
- Fold the wet mixture into the dry ingredients until just combined.
- Beat softened cream cheese with powdered sugar until smooth and creamy for the filling.
- Fill each muffin liner halfway with batter, add a spoonful of cream cheese mixture, and top with more batter until three-quarters full.
- Sprinkle cinnamon sugar over each muffin.
- Bake for 18–20 minutes, until golden brown and a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack.
- Drizzle with melted white chocolate if desired.
Notes
For a gluten-free version, use a 1:1 gluten-free flour blend. To make vegan, replace eggs with flax eggs and use a vegan cream cheese alternative.
