Description

These muffins combine the warmth of cinnamon with a creamy filling, creating a comforting treat for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tablespoon cinnamon sugar (topping)
  • Optional: 1/4 cup white chocolate, melted (drizzle)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. Whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon in a large bowl.
  3. Combine melted butter, milk, eggs, and vanilla extract in another bowl and whisk until smooth.
  4. Fold the wet mixture into the dry ingredients until just combined.
  5. Beat softened cream cheese with powdered sugar until smooth and creamy for the filling.
  6. Fill each muffin liner halfway with batter, add a spoonful of cream cheese mixture, and top with more batter until three-quarters full.
  7. Sprinkle cinnamon sugar over each muffin.
  8. Bake for 18–20 minutes, until golden brown and a toothpick comes out clean.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack.
  10. Drizzle with melted white chocolate if desired.

Notes

For a gluten-free version, use a 1:1 gluten-free flour blend. To make vegan, replace eggs with flax eggs and use a vegan cream cheese alternative.
