Instructions
- Marinate the chicken: In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Add the chicken breasts, ensuring each piece is thoroughly coated. Cover and let marinate in the refrigerator for at least 30 minutes; for a more robust flavor, let it sit for up to 4 hours.
- Preheat your grill: Prepare your outdoor grill for medium-high heat or heat an indoor grill pan over medium heat, lightly greasing it to prevent sticking.
- Grill the chicken: Remove the chicken from the marinade, allowing excess to drip off. Place the chicken on the grill and cook for 6-7 minutes on each side, or until it reaches an internal temperature of 165°F, ensuring the meat is juicy and tender.
- Add the feta: About one minute before you take the chicken off the grill, sprinkle crumbled feta on top. Cover the grill to allow the cheese to warm and soften just enough to melt into the chicken.
