Description

Decadent cheesecake bars with a crunchy pistachio crust and a creamy honey filling, offering a delightful balance of textures and flavors inspired by Greek cuisine.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup Greek yogurt
  • 1/2 cup honey
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup chopped pistachios
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the graham cracker crumbs and melted butter in a mixing bowl until the mixture resembles wet sand.
  3. Press this mixture firmly into the bottom of a greased 9×9-inch baking pan.
  4. Beat the softened cream cheese with an electric mixer until smooth and creamy.
  5. Add Greek yogurt, honey, eggs, vanilla extract, and a pinch of salt. Mix until well combined.
  6. Fold in the chopped pistachios carefully.
  7. Pour the filling over the prepared crust and spread evenly.
  8. Bake for 30-35 minutes until the center is set with a slight jiggle.
  9. Cool the bars completely in the pan before cutting into squares.

Notes

These cheesecake bars can be made ahead of time and stored in the fridge for up to three days. They freeze well too.
