Description

Deliciously grilled potatoes coated in garlic and melted cheese, perfect as a side dish for any meal.


Ingredients

  • 2 lbs golden potatoes
  • 4 cloves fresh garlic, minced
  • 2 cups shredded cheese (Cheddar, Mozzarella, Pepper Jack, or Gouda)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the grill to medium heat.
  2. Wash the golden potatoes thoroughly and cut them into bite-sized pieces.
  3. Toss the potatoes in a large mixing bowl with olive oil, minced garlic, salt, and pepper.
  4. Place the seasoned potatoes in a grill basket or wrap them in aluminum foil, sealing the edges tightly.
  5. Grill the potatoes for about 25-30 minutes, turning occasionally.
  6. Remove the potatoes from the grill and sprinkle shredded cheese over the top.
  7. Cover the grill or foil tightly to let the cheese melt for about 5 minutes.
  8. Garnish with fresh parsley before serving.

Notes

You can prep the potato mixture ahead of time and refrigerate for up to 24 hours. If grilling isn’t possible, use an air fryer or bake in the oven at 400°F for about 45 minutes.
