- 4 medium zucchini
- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- Olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the zucchini by cutting in half lengthwise and scooping out the centers.
- Sauté the diced onion and minced garlic in olive oil until the onion is translucent.
- Brown the ground beef in the skillet, breaking it up as it cooks. Stir in Italian seasoning, salt, and pepper.
- Mix in the marinara sauce, cooking for a few minutes until heated through.
- Fill each zucchini boat with the beef mixture.
- Top the filled zucchini with shredded mozzarella cheese.
- Bake for 25-30 minutes or until the zucchini is tender and cheese is golden.
