Description

A comforting meal featuring vibrant zucchini filled with seasoned ground beef, onion, marinara, and topped with melted mozzarella cheese.


Ingredients

  • 4 medium zucchini
  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the zucchini by cutting in half lengthwise and scooping out the centers.
  3. Sauté the diced onion and minced garlic in olive oil until the onion is translucent.
  4. Brown the ground beef in the skillet, breaking it up as it cooks. Stir in Italian seasoning, salt, and pepper.
  5. Mix in the marinara sauce, cooking for a few minutes until heated through.
  6. Fill each zucchini boat with the beef mixture.
  7. Top the filled zucchini with shredded mozzarella cheese.
  8. Bake for 25-30 minutes or until the zucchini is tender and cheese is golden.
