Instructions
- Melt the butter in a large pot over medium heat, coating the bottom.
- Sauté the chopped onion and minced garlic, stirring occasionally until softened, about 3-4 minutes.
- Add the diced ham and cubed potatoes, stirring for another 2-3 minutes.
- Pour in the chicken broth and bring to a gentle boil.
- Simmer until potatoes are fork-tender, about 15-20 minutes.
- Stir in heavy cream, seasoning with salt and pepper to taste, and let simmer for another 5 minutes.
- Garnish with fresh parsley and serve.
