Description

A hearty and comforting soup featuring tender potatoes, diced ham, and a rich creamy broth, perfect for chilly evenings.


Ingredients

  • 2 cups cooked ham, diced
  • 4 medium potatoes, peeled and cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • Chopped parsley, for garnish

Instructions

  1. Melt the butter in a large pot over medium heat, coating the bottom.
  2. Sauté the chopped onion and minced garlic, stirring occasionally until softened, about 3-4 minutes.
  3. Add the diced ham and cubed potatoes, stirring for another 2-3 minutes.
  4. Pour in the chicken broth and bring to a gentle boil.
  5. Simmer until potatoes are fork-tender, about 15-20 minutes.
  6. Stir in heavy cream, seasoning with salt and pepper to taste, and let simmer for another 5 minutes.
  7. Garnish with fresh parsley and serve.

Notes

This soup stores well in the fridge for up to 3 days. Reheat gently to avoid separation of the cream.
