- 2 cups cooked chicken, shredded
- 1 can black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 red bell pepper, diced
- 1 cup brown rice, cooked
- 1 cup salsa
- 1 tsp cumin
- 1 tsp chili powder
- 1 cup shredded cheese (cheddar or Monterey Jack)
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the shredded chicken, rinsed black beans, corn, diced red bell pepper, cooked brown rice, salsa, cumin, chili powder, salt, and pepper in a large bowl.
- Pour the mixture into a greased casserole dish and spread it evenly.
- Sprinkle the shredded cheese generously on top.
- Cover the dish with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes until the cheese is golden and bubbling.
- Garnish with fresh cilantro if desired and serve warm.
