Crispy on the outside and tender on the inside, these healthy zucchini fritters are a delightful summer side dish that everyone will love.
Ingredients

- 2 medium zucchinis, grated
- 2 large eggs
- 1/4 cup oat flour (or almond flour for low-carb option)
- 1/4 cup grated Parmesan cheese (optional)
- 1/4 cup plain Greek yogurt or cottage cheese
- 1 garlic clove, finely minced
- 1/4 tsp sea salt
- 1/4 tsp black pepper
- 1/2 tsp dried oregano or thyme
- 2 tbsp chopped fresh parsley or dill
- 1 tbsp olive oil or olive oil spray for pan-frying
Instructions
- Prep the zucchini by grating and squeezing out excess moisture with a clean dish towel.
- Mix the squeezed zucchini with eggs, flour, cheese (if using), Greek yogurt, garlic, and seasonings in a large mixing bowl.
- Heat a non-stick skillet over medium heat and drizzle with olive oil.
- Scoop about 1/4 cup of the batter into the skillet and gently press down to flatten.
- Cook for about 3-4 minutes on one side until golden brown, then flip and repeat.
- Drain cooked fritters on a paper towel-lined plate and serve warm.
Notes
Can be prepared ahead by forming fritters and refrigerating, then cooking just before serving. For a healthier option, air fry or bake instead of pan-frying.
