- 8 oz Boursin cheese (herb-flavored)
- 1 cup breadcrumbs (preferably panko)
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil

Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper on both sides.
- Spread a layer of Boursin cheese over each chicken breast.
- Mix the breadcrumbs and grated Parmesan cheese in a bowl.
- Press the breadcrumb mixture onto the cheese-covered chicken.
- Place on a greased baking sheet and drizzle with olive oil.
- Bake for 25-30 minutes, until cooked through and golden brown.
- Garnish with fresh herbs before serving.
Notes
You can prep the chicken ahead of time and store it in the fridge, or use chicken thighs for a juicier alternative. To reheat, bake at 350°F for about 20 minutes.
