Description

A vibrant and nourishing bowl featuring golden-brown chicken, fluffy quinoa, and a colorful mix of vegetables, drizzled with olive oil and lemon juice.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse 1 cup of quinoa under cold water to remove its natural coating. In a medium saucepan, combine the rinsed quinoa with 2 cups of water or broth, and bring it to a boil. Once boiling, cover and simmer for about 15 minutes until the quinoa is fluffy. Fluff with a fork, and set aside.
  2. Season two boneless, skinless chicken breasts with salt, pepper, and a sprinkle of dried oregano.
  3. Heat 2 tablespoons of olive oil in a skillet over medium heat. Place the seasoned chicken breasts in the hot skillet and cook for 6-7 minutes on each side until golden brown and the internal temperature reaches 165°F. Let them rest for a few minutes before slicing them into tender pieces.
  4. Combine 1 cup of halved cherry tomatoes, 1 diced cucumber, 1/2 diced red onion, and 1/4 cup of halved Kalamata olives in a mixing bowl. Add in 1/4 cup of crumbled feta cheese and gently toss.
  5. Mix in the fluffy quinoa and sprinkle 1 tablespoon of lemon juice over the mixture, tossing gently until all ingredients are well coated.
  6. Slice the rested chicken and serve it atop the colorful quinoa and vegetable mixture, garnishing with freshly chopped parsley.

Notes

Make-ahead tips: Prepare the quinoa, chop your veggies, and grill the chicken the day before. Keep ingredients separate until serving to maintain freshness.
