Description

Aromatic homemade Spanish rice that’s rich in flavor and perfect for any meal.


Ingredients

Scale
  • 1 cup long-grain rice
  • 2 medium tomatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt to taste
  • Olive oil

Instructions

  1. Sauté the chopped onion and minced garlic in a couple of tablespoons of olive oil until softened and aromatic, about 3-5 minutes.
  2. Add the diced tomatoes, paprika, cumin, and salt. Cook until the tomatoes soften, about 4-5 minutes.
  3. Incorporate the long-grain rice, stirring to coat with the spiced tomato mixture. Toast for an additional 2-3 minutes.
  4. Simmer by pouring in the broth and bringing to a soft boil. Once bubbling, reduce to low heat, cover, and simmer for about 20 minutes until the rice absorbs the liquid.
  5. Fluff the rice with a fork and serve hot with your favorite main dishes.
