- 1 cup long-grain rice
- 2 medium tomatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken or vegetable broth
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt to taste
- Olive oil
Instructions
- Sauté the chopped onion and minced garlic in a couple of tablespoons of olive oil until softened and aromatic, about 3-5 minutes.
- Add the diced tomatoes, paprika, cumin, and salt. Cook until the tomatoes soften, about 4-5 minutes.
- Incorporate the long-grain rice, stirring to coat with the spiced tomato mixture. Toast for an additional 2-3 minutes.
- Simmer by pouring in the broth and bringing to a soft boil. Once bubbling, reduce to low heat, cover, and simmer for about 20 minutes until the rice absorbs the liquid.
- Fluff the rice with a fork and serve hot with your favorite main dishes.
